Beat the Winter Blues with Broil King : Steak Bruschetta on the Pellet Grill

Just because it’s winter doesn’t mean you can’t still fire up the pellet grill for some delicious snacks, and this steak bruschetta is the perfect treat for your next get-together or lunch! Make the most of your pellet grill by smoking goat cheese, toasting ciabatta, and grilling steak before putting it all together into a mouth-watering open-faced sandwich that’s sure to be a crowd favourite!


To make this steak bruschetta for yourself, you’ll need the following:


  • 6-8oz Steak (we used denver steak, however, striploin and tenderloin are also great!)

  • 1 small log of Goat Cheese

  • 2 cups Pea Shoots (Arugula also works well)

  • 1 load Ciabatta Bread

  • Balsamic Glaze

  • Salt

  • Oil

  • Baking Sheet Pan

  • Wire Rack

  • Grilling Tongs


  1. Begin by preheating your pellet grill to 230F and place your goat cheese onto a wire rack in a sheet pan.

  2. Once your pellet grill is up to temperature, put the goat cheese on the pan onto the middle of your pellet grill and allow it to smoke for 12-15 minutes.

  3. Remove the goat cheese from the grill and increase the temperature to 600F.

  4. While the grill is heating up, season your steak with salt.

  5. Put the steak onto the grill and allow it to cook with the lid closed for 3 minutes before flipping. Let the steak cook for another 3 minutes then flip again and cook another 3 minutes, then remove from the grill.

  6. Cut the ciabatta in half to open it up and drizzle the cut faces with oil. Place on the pellet grill and toast for 2-3 minutes or until golden brown.

  7. To finish, spread some goat cheese on the toasted faces of the ciabatta. Cut up the steak into bite-sized pieces and mix with the pea shoots, allowing the juices from the steak to “dress” the pea shoots. Pile the steak and pea shoot mixture onto the ciabatta, drizzle with balsamic glaze and enjoy!


This is a delicious and simple bruschetta that has a lot of ways you can customize it. Try adding pickled shallots for a bit of zestiness, or caramelized onions or sauteed mushrooms for a bit more umami goodness!
